The Domaine
Jean & Sébastien Dauvissat

The DAUVISSAT family has owned the estate since 1899. The family’s vineyard holding extends to more than 11 hectares & planted with vines that are on average 20 to 40 years old (70 years old for the ``Vieilles Vignes`` Cuvée). The cellars, which are located under a 17th century house (former presbytery of the Petit Pontigny), were enlarged in 1980, and house the wines at an average temperature of 10 to 15°C summer and winter.

The Vineyard

This family vineyard extends over 10 hectares of vines aged from 20 to 40 years old and is cultivated with the greatest respect for the terroirs.

The Climate

The semi-continental climate of the region favours the good ripening of the grapes, which gives a very elegant wine of great finesse.

The grape variety

Chardonnay is the only grape variety allowed on the marvellous steep slopes of the Serein Valley.

The Vines

The vines are planted on a stony and clayey-limestone soil which brings a lot of minerality to the wines. The vines of the Domaine are on average 40 years old, and up to 70 years old for the Vieilles Vignes.

Vinification

Traditional vinification in Wine vats and oak barrels, bottled after 18 to 24 months of ageing.

from Monday to Saturday
from 9 a.m. to 12 a.m. and from 2 p.m.
To 6 p.m. and Sunday by appointment
